*(serves 6-8)*

* 1 lb great northern white beans
* 6 cups chicken broth
* 1 tsp chicken stock base
* 2 onions, chopped
* 6-8 garlic cloves, minced
* 1 tsp oil
* 7 oz diced green chilis
* 2-3 tsp cumin
* 2 tsp oregano
* 1 tsp cayenne pepper
* 4 cups diced cooked chicken
* 1 cup sour cream
* 3 cups shredded monterey jack cheese
* cilantro and extra shredded cheese for garnish

Soak beans overnight.

Add beans, broth, and stock to a pot, and simmer for two hours.

Saute the onions and garlic. Add them to the broth, along with the cumin,
oregano, cayenne pepper, and chicken. Simmer for another half hour.

Add sour cream and cheese, and continue simmering until the cheese is melted.
